Pumpkin Spice Tiramisu Pancakes

Pumpkin spice season is just around the corner, and these Pumpkin Spice Tiramisu Pancakes are your new seasonal breakfast upgrade. You get a boost of caffeine from the batter made with our Limited-Edition Pumpkin Spice Latte Protein Smoothie powder. You get another caffeine boost from the coffee that’s poured over the pancakes (a la espresso-dunked ladyfingers in a tiramisu). Then you get a double dose of protein from the Protein Smoothie powder that’s mixed with Greek yogurt to make a creamy topping for layering your stack. These low-in-sugar, big-on-flavor pancakes will keep you satisfied and energized all day long. They’re the perfect Pumpkin Spice fuel for this fall!

 

 

Ingredients

Pancakes: 

  • 1 ¼ cup all-purpose flour
  • 3 teaspoons baking powder
  • 1 scoop FlavCity Pumpkin Spice Latte Protein Smoothie Powder
  • 1 scoop FlavCity Pumpkin Spice Latte Protein Smoothie Powder

  • 2 tablespoons coconut sugar
  • 1 ¼ cup milk of choice
  • 3 tablespoons melted butter, plus more cooking
  • 1 large egg

 

Toppings: 

  • ½ cup Greek yogurt
  • ½ scoop FlavCity Pumpkin Spice Latte Protein Smoothie Powder

  • 2-3 tablespoons coffee
  • Pumpkin Spice

Directions

  1. Add the flour, baking powder, FlavCity Protein Smoothie Powder and coconut sugar to a large bowl and stir together to combine. 
  2. In a smaller bowl add the milk, melted butter and egg, and whisk until combined. 
  3. Add the wet ingredients to the dry ingredients and mix until smooth. If necessary, add an additional splash of milk so the batter is still thick, but pourable. You want your pancakes to have some height!
  4. Heat a ceramic pan over medium heat and add a pat of butter to coat the bottom. Pour the batter onto the pan using a ¼ cup measure for each pancake. Cook until bubbles form and the edges are dry, about 2-3 minutes, then flip and cook until browned on the other side. Repeat with the remaining batter. Let the pancakes rest.
  5. Meanwhile, in a separate bowl, mix together the Greek yogurt and ½ scoop FlavCity Protein Smoothie Powder.
  6. Assemble your stack repeating the following steps: place one pancake on a plate, pour a little coffee over it, then top with enough of the yogurt mixture to spread it nearly to the edge, about a spoonful. End with a layer of the yogurt mixture. Finish with a dusting of pumpkin spice and enjoy!
